I seems that Salmon is one of this fish that you either love it like I do or you hate it. I am one that would eat it daily if I could afford to. Here is a quick and easy recipe for Salmon, it is a bit spicy but you can always reduce the peppers (sometimes I leave them out and it is still good). Mustard Glazed Salmon is my absolute favorite for Salmon!
4 Salmon Fillets
1/4 cup Stone Ground Mustard
1/4 tsp Lemon or Lime Juice (depending on what you prefer)
1 tsp chopped Chipotle Pepper in Adobe Sauce
1/4 Cup Fat Free Sour Cream
Salt and Pepper to taste
I mix all the ingredients together in a blender, this helps the pepper to be ground up a bit more evenly to prevent having spots that are too spicy.
I then coat the fish with the sauce and bake at 350º for 15 – 20 minutes or until the fish easily flakes apart. I will sometimes keep the extra sauce and top the fish with it or put it in a small bowl for dipping.
I love that this is a quick and easy healthy meal, I make extras because I love the leftovers over the next couple of days. Sometimes I freeze the extra so I can have something already prepared in the freezer for those nights that are rushed!
I always keep teh Chipotle Pepper in Adobe Sauce in the freezer. I find most recipes call for one pepper so I buy a can of them and separate the into an ice cube tray then freeze. This way when I need one pepper in the sauce, I have it without wasting the remaining part of the can.
