Peanut Butter Cookies

I do not bake often, even though I love to bake. My family does not eat dessert foods too often and my husband switched jobs (I used to send my baked goods to work with him). Today I made an exception. It is National Peanut Butter Lover’s Day (yes there is a day for it!), I decided to make Peanut Butter Cookies to celebrate. When I was pregnant with my youngest, I had two things I could eat and not be sick, peanut butter sandwiches and Chick Fil A, he loves both!

Here is an easy recipe for Peanut Butter Cookies:

Ingredients:

1/2 tsp baking powder
3/4 tsp baking soda
1 1/4 all purpose flour
1 egg
1/2 cup peanut butter
1/2 cup butter softened
1/2 cup brown sugar (packed tight)
1/2 cup sugar
Chocolate Candy

Beat the butter, and sugars until well blended, I add the ingredients to the mixer and let it run while I mix the dry ingredients.
While it is mixing in a separate bowl mix the flour, baking powder, baking soda and salt. once it is well blended, mix it in with the butter and sugar mixture and blend well.

Put the mixture in the refrigerator and let sit at least 4 hours (this makes it easier to form the cookies.

Preheat your oven to 375°, I like my cookies on the larger side so I scoop out enough of the cookie dough to form a ball that is about 2 – 2 1/2 inches.  Make sure to keep the cookies apart enough so that when they bake they is enough room for them to spread out a bit.  Use a fork to make your crisscross patters (I can never get this part done right).  Bake them for about 15 minutes (depends on the size of your cookies).  When they have cooled a bit, add chocolate candy to the top.  I do not do this with all of them, just a few because nothing is better than a little chocolate and peanut butter!

  11. This is my second comment on this because I am so totally hungry for peanut butter cookies :) I have to tell you this story about my mom. She made peanut butter cookies like a month ago and she called me and told me. Then she said they tasted good but something was missing…..yeah, she forgot to put in the peanut butter! Moms…..lol

      That is funny, I do that all the time. I always blame the fact that my son and I usually bake together so I am making sure he is not getting hurt and not paying close enough attention to the directions.
